Banana Blueberry Protein Pancakes
Ingredients:
Kodiak flapjack mix (I used the buttermilk and honey)
2 scoops of vanilla protein powder
3 mashed ripe bananas
1 cup of fresh blueberries (not frozen)
1 1/4 cups water
Instructions:
Mash your bananas in a mixing bowl. I used a large fork to make sure they were good and smashed up in the bottom of the bowl. Next I added the Kodiak flapjack mix. You can use any pancake mix you prefer. I have used this same base recipe with gluten free pancake mixes, cassava flour, etc. Then I added my 2 scoops of protein powder. I don't know about you, but I always use a heaping scoop that has a little spilling over the top. Next up is water. I used a whisk to mix the wet and dry ingredients together so its a nice thick batter. Once you feel like its blended well, add in those blueberries and continue folding them in until it looks like everything is nicely mixed. I kept this recipe simple, but you can definitely get creative by swapping out your protein flavors and fruits. Cinnamon is also a great option if you want a little more flavor, but as is, these came out fluffy and delicious!
I used an ice cream scoop to transfer the batter from the bowl to my griddle pan and used ghee on the griddle. Let the bottom cook until it is firm enough to flip your pancake without making a mess. Be sure to cook them evenly on both sides. This recipe made 15 pancakes. Great for a large family, or if you like to plan ahead. I love to get my meal prep done and be ready for the week, so I divided mine up into servings so I’m ready to go.
I added a tablespoon of natural peanut butter on top with a drizzle of maple syrup. I have also used almond butter and no syrup. Feel free to put your spin on this recipe and let me know what you think!
